A Colorado-based startup has engineered a chocolate bar with a significant portion of its sugar replaced with mushrooms. The result, Fusion Shroom Bar, is a dark chocolate that tastes just like normal, but contains less sugar (at least 66% less) and more nutrients. The company explains that its goal was always to develop products that could replace sugar in a healthy way.Mushrooms are rich in polyphenols, beta-glucans, ergosterol, and vitamin D, among others. One of the most intriguing is agaricus bisporus, which has been shown to be an antimicrobial and anticancer agent. A recent study also reported that consuming this mushroom can reduce the risk of prostate cancer by modulating the production of conjugated linoleic acid (CLA) in the body.It’s no secret that fungi can have hallucinogenic effects, and many people have had their experiences documented on social media. Depending on the species consumed, those effects can vary widely. For example, the psilocybin in mushrooms such as psilocybe cubensis can cause psychedelic trips that involve visions, feelings of euphoria and heightened empathy, and can even lead to “ego disintegration.” Some of the more common effects from this mushroom are euphoria and giddiness. The effects typically begin within an hour after ingesting the mushroom and can last up to five hours.Other common edible mushrooms, such as the genus Ganoderma, can also have a mildly hallucinogenic effect when brewed in tea. Known as the spectacular rustgill mushroom or big laughing mushroom, this species grows in Australia and is commonly found on rotting wood and logs. This mushroom has a cap up to 15 cm in diameter, and its stem is golden or tan with silky brown "hairs." The flesh inside this fungus is cream to white. Like most other mushrooms containing psilocybin, the spectacular rustgill mushroom bruises blue when handled or damaged.Grifola frondosa, more commonly referred to as maitake or shiitake, is another popular medicinal mushroom with multiple bioactive compounds. The gyromite, an alkaloid found in this fungus, has been shown to be effective in inhibiting cancer cell growth and tumor growth. A clinical trial of this mushroom in patients with various cancers showed that it is able to prevent cancer recurrence, and induce tumor regression or symptom improvement in high percentages of breast cancer, lung cancer, and liver cancer patients.
